I suspect caffeine could be an irritant. If I'm close to people drinking coffee it can make me sneeze.
It's very possible as you suggest it could have been causing your body an increased level of inflammation (putting it out of equilibrium).
Judging by the cause of your dry eye, the TBUT, it could be that the caffeine when metabolised interferes either directly or indirectly with the quality of tear (meibum) production, by affecting the lipid/water ratio and/or content.
